Yep it's that time again. I feel like a mad scientist and my lab is my smoker loaded with peach and pecan wood.

bacon theme (like there is any other, right):

How about favorites like smoked chives mixed in cream cheese and stuffed in a jalapeno or Anaheim pepper, wrapped in bacon and sprinkled with brown sugar.

bacon wrapped, smoked tater tots with a slice of red jalapeno and sharp cheddar cheese brushed with a homemade BBQ sauce. (smoked the tater tots first for more smoke flavor......it worked)

My newest creations: bacon wrapped cornish game hens one stuffed with chorizo and one stuffed with boudin and of course wrapped in........? You guessed it, BACON! i smoked these for 45 minutes at 200 degrees first before wrapping so I got smoke into the meat.

of course I did my usual wild hog sausage (my father in law gives us 10-15# a year, his deer lease is full of hogs) pork and beef ribs, and a brisket.

also smoked some tabasco and jalapeno peppers.

Aw man, that sounds friggin delicous! It isnt lunch time yet but now my mouth is watering and I cant wait for next weekend to fire up the barbie again

Personally, I'm waiting for this whole bacon fad to pass. Don't me wrong - I LOVE bacon. But bacon flavored frozen yogurt? Blech!

I'll still weave some bacon on my Thanksgiving turkey though.
