So I am not sure what changing the rear suspension actually does like what are the reasons for setting it soft or setting it hard. I was told that with a passenger I might want to make it harder and that if you do more twisties it should be set a specific way. Can anyone shed some light on this for me?

As far as I recall, you're adjusting the tension of the spring, which will ultimately control how much travel the shock has with weight under it. Too soft and the back of the bike sags down; too stiff and the rear suspension doesn't want to compress readily.
If you have a lot of weight on the bike (like with a passenger), you want to stiffen it to keep the bike from using up a lot of the travel just to hold your weight.
