Once you go black.........
Looks good. I've been planning on changing out the countertops in my kitchen as well, but my cabinets are slowing me down. They are too nice to tear out, but I'm wondering if they'd look ot of place if I left them. I'm sure cabinets are a budget breaker.
You shouldn't have to loosen all of that, just the lower triple clamp bolts. Turn the bars left and right; as long as the forks can rotate in the lower clamp, you should get it squared back up.

I've been using the DuPont Teflon in the blue can with good results. I've seen others have been mentioning that the yellow can lasts longer. Un/fortunately the can lasts forever, so I haven't tried it out yet.
Have you flushed the fluid, or just bleed them? SS brake lines will give you a firmer lever.
I've never heard of having to rebuild the master cylinder every two years. I'd start with the previous two things mentioned and go from there.

Siphon would be my least concern. Id be worried about someone just walking off with the cap, or someone throwing stuff in there. There was a recent story on the triumph forum where someone's brakes locked up, both front and rear at the same time. Turns out, someone put gum in the reservoirs...
If you are looking for a track only bike, look for one that was setup for the track. Aftermarket suspension, brakes, ect. will do you better than flushmounts and fender eliminators. I'm not sure on canada pricing, but you could find a lot better bikes for that price down here. And newer models...
If it's anything like around here, it'll pass.
I kid you not, I've seen this happen numerous times, including a couple times for me: the last time the bank had the appraiser come out, and he asks either the seller in a general conversation, "nice house, can I ask how much they paid?"...
